So i guess the are not any recipes for them lol

I stick to the basics, salt, pepper, olive oil, grill, eat and enjoy.

Also goes great in soup, instead of chicken.

I personally like them best simple as Medve stated, but you can batter them up and fry them I like them this way as well. Pretty much any chicken recipe will work for grouse. One of my favorite is roasting them over a fire at the hunting cabin, simple but taste great and my fellow hunters at the cabin love them this way as well.

For quail breasts I beat up a egg dip it in there then roll it in some finely crushed vegitable ritz crackers mixed mith spike seasoning then toss it in a pan with the bottom covered in vegitable oil and fry those babies up.

mmm tasty.

here's a good one, I use it for just about anything that is pretty gamey tasting, mix about a 1/4 cup olive oil and about a 1/16 of a cup basil leaves and grill it till its about medium, take it off the grill, put it on a plate and sit for about 5 minutes to let it basically cook itself just a tad more. the ingredient amounts will change if you use less or more of your meat, you want it to completely cover whatever you are cooking, I use a plastic baggy to mix it. good luck

i usually breast them out and bake in the oven with like a half strip of bacon on the top so the meat doesnt dry out

i like to roast the whole bird in the oven, usually i fill it with a cheesy,broccolli, rice concoction.


if you take your fillet knife and slice the breast paper thin. get some butter or margerine snappin hot in the pan. and fry for just about 30 sec. just make sure you don't over cook. a little salt and pepper for seasoning. i like a little green onion too. works great for wood duck too.

O yea i forgot to say........i usually rub the breasts with a simple olive oil and butter.

This one may be original, I like to stuff the breast with bread chunks, soak the bread chunks with "fireball" shooter, (I don't actually drink the stuff, just bring it for cooking grouse), wrap it in foil an stick it in the coals of the fire for 30-45 min. The cinnamin flavour of the fireball gets into the meat, pretty tasty!
