how do you clean a dove? Just breast them out?

that's what i've been told. With the 3 doves i've shot, I just defeathered the breast area, and cut the skin. then I pealed back the skin and started cutting the meat out. I don't think I got all the meat out but that's how I did it.

Breast em' out. I hold the dove in my left hand, head away from me. With the right hand, I put my thumb into the body cavity just below the bottom of the breast, and then pull up on the breast. When I have pulled it up as far as it will do, then I hold both wings in my left hand, and twist the breast away from the body with my right hand. Then, I just peel the skin and feather away from the breast. You are done, and this should take about 10 seconds per dove.
