If you are using specifically for whitetail I'd say neither. Go with something smaller(25-06,270 or the wsm, wssm counterparts). However, if you are looking at multiple game(elk, mulies, etc.) cartridge I would lean towards the 300.
yes mulies and maybe elk sum day

ALL GREAT DEER GUNS
.270 ON THE LIGHT SIDE FOR THE BIGGER GAME.
300 ULTRA IS MY VOTE FOR BEST BIG GAME CALIBER.
AS FLAT OF A SHOOTER AS THEY COME. MORE THEN ENOUGH ENERGY AT ANY RANGE.
YOU BETTER HAVE A GOOD SHOULDER FOR THOSE ULTRA MAGS.

You can go with the .300WSM if the Ultra is to big. Remember that proper reloading can take care of some recoil. I have notheing against the .7mm but when reloading it has less choices for bullets. The .7mm will handle all deer species but the .300 goes beyond to bear and into Africa. The ballistics with the heavier bullets out to greater distances will be what I look at. check with hornady or Nosler and look at whats available.
