I have always used hickory. When ever I have smoked deer roasts, I will put some apple slices into the middle and inject the BBQ mix.

Well, it's three A.M. I'm just waiting for the hickory chips to start smoking. I waited til the last minute to shop for wood and wasnt able to get applewood. I'n a fee minutes, 20 pounds of brown sugar coated pork are going I'n the black box. Should be ready around 2-3 PM.
